Craving a dessert that’s both elegant and irresistible? This Berry Chocolate Tiramisu is the ultimate treat for any occasion! This delightful twist on the classic Italian dessert combines rich mascarpone, luscious raspberry jam, and decadent raspberry dark chocolate ganache, topped with fresh berries for a burst of flavor in every bite. Perfect for any celebration or a delightful end to any meal!

  • 16 oz Pound Cake, sliced
  • 1 cup Raspberry Jam
  • 1 lb Mascarpone
  • 1/2 cup Whipping Cream
  • 1/4 cup Sugar
  • 1 tsp Vanilla Extract

chocolate ganache:

1. To prepare the ganache, place the chopped chocolate in a medium, heat-proof bowl. (The smaller the pieces the easier and faster it will melt.) In a small saucepan, heat the cream over medium heat until it begins to gently simmer. Avoid bringing it to a rapid boil.

2. Pour the hot cream over the chopped chocolate. Let it sit for 2–3 minutes to gently soften the chocolate. Using a silicone spatula, slowly stir the mixture until it is fully combined and the chocolate has melted. Let sit at room temperature while you assemble the rest of the tiramisu.

3. Using an electric mixer, beat the cream, sugar, and vanilla in large bowl until soft peaks form. Using a large silicone spatula, stir 1/4 of the whipped cream into the mascarpone mixture to lighten. Then fold the remaining whipped cream into the mascarpone mixture.

4. Line the bottom of a 8 x 8 baking dish with half of the pound cake.

5. Spread half of the jam mixture over the pound cake. Spread half of the mascarpone mixture over the jam mixture, then spread the chocolate ganache over the mascarpone mixture.

6. Repeat layering with the remaining pound cake, jam mixture, mascarpone mixture. Then top it all off with raspberries, blueberries, and chopped chocolate.

7. Cover and refrigerate at least 3 hours or overnight.

8. Enjoy!
