Oh my garland, it is Christmas time! We've got the perfect, easy holiday fudge recipe that just so happens to be vegan, too. Our friend Diane has done it again with this recipe for Chocolate Almond Cherry Fudge. The rich chocolate brought by our Premium Oat Milk Chocolate Chips pairs perfectly with the almond and cherry flavors. The satisfying crunch of almond comes with every bite of this delicious fudge.

Chocolate Almond Cherry Fudge
Recipe developed by The Beet Drop - Diane Garvey Makes ~20 servings Ingredients- 2 ½ cups ESC Oat milk + Dark Chocolate Chips 55%
- 12-14 ounces vegan sweetened condensed milk *see notes
- ½ cup chopped dried tart cherries (plus 2 T. for topping)
- ½ cup chopped toasted almonds (plus 2 T. for topping)
- 1 tsp. almond extract
- ⅛ tsp salt
- Line an 8 x 8 baking dish with parchment paper.
- Place chocolate chips, condensed milk, and salt in a medium saucepan. Stir. 3. Heat on low, continuously stirring until everything is mostly melted together (this should take 5-8 minutes). Remove pan from heat and stir well to get the remaining chips to melt.
- Stir in almond extract, cherries, and almonds.
- Pour into the prepared 8 x 8 baking pan, smoothing out the top with a spatula. 6. Sprinkle with extra chopped almonds and cherries.
- Let set in fridge for 4 hours.
- When ready to serve, remove fudge from pan. Place on cutting board and let sit at room temperature for 15 minutes before cutting.
- Slice into desired size pieces.
- Both coconut-based and oat milk-based vegan condensed milk work in this recipe. If using coconut-based condensed milk, I recommend using 14 ounces. If using oat milk based, I recommend using 12 ounces.
- This fudge can be frozen. Simply cut into squares, wrap well in plastic wrap, and store in an airtight container in the freezer for up to 2 months.
- This fudge will last 3 weeks in an airtight container in the refrigerator.
- Keep refrigerated until ready to serve. Depending on the texture you like your fudge, you can either keep the fudge at room temperature for up to 5 hours if you like a soft fudge. If you want a chilled dense fudge, keep it refrigerated until ready to eat.
- Do not overheat the chocolate. Overheating chocolate may cause graininess.
