I am holding onto summer by making as many s’mores-inspired treats as possible, so I teamed up with Endangered Species Chocolate to bring you these chocolate covered Golden Graham s'mores bars! They give you all the classic flavors you love about s’mores with just four ingredients and no baking required! The star of this recipe is undoubtedly the thick layer of melted Endangered Species 48% Milk Chocolate! This chocolate is uniquely rich and creamy, with even more cocoa than your average bar, with no artificial sweeteners, and ingredients you can truly feel good about. This bar is certified Fairtrade, and 10% of profits are paid forward to organizations that make a positive impact. This bar specifically brings awareness to the plight of the Sea Otter, so buying ESC gives you the good stuff with a good cause!

ingredients:

  • ½ cup unsalted butter
  • 1 (10.5-ounce) bag mini marshmallows (~7 cups)
  • 1 tablespoon vanilla extract (optional)
  • 5 cups Golden Grahams
  • 6 ounces Endangered Species 48% Milk Chocolate Bar
  • Flaky sea salt for garnish (optional)

instructions:

1. Line a 9x9-inch baking pan with parchment paper.

2. In a large pot over medium heat, melt the butter until completely liquefied.

3. Reduce the heat to low and stir in the marshmallows until melted and well-combined.

4. Turn the heat off completely and whisk in the vanilla extract (optional).

5. Remove from heat and fold in the Golden Grahams. Working quickly, transfer the mixture to your prepared pan and use a spatula to flatten it out in an even layer.

7. Chop your chocolate and melt over a double-boiler or in 30-second intervals in the microwave, stirring in between.

8. Pour the melted chocolate over your bars, using the spatula again to spread in an even layer. Place in the refrigerator to set for at least 30 minutes.

9. Slice, finish with sea salt (optional), and enjoy!
