Pâtés are often a love it or hate it kind of dish. The most common rendition is a mixture of cooked, ground meat and fat combined into a smooth, spreadable paste. To some this might sound like heaven; Others will tell you to keep it as far from their plate as possible. Regardless of what group you fall under, we’ve got a pâté recipe that will win over the masses. The magic ingredient? Chocolate, of course. This Chocolate Pâté is a thicker, sliceable chocolate mousse. Butter, milk and egg yolks combine with our Extreme Dark Chocolate (the highest cocoa content bar we offer at 88%), which keeps the sweetness in check without sacrificing flavor. It may look and taste indulgent, but this recipe is as simple as melting the ingredients together and chilling overnight. This pâté is delectable enough to stand alone, or you can balance out the richness by serving it with your favorite fresh fruit. Either way, this chilled dessert is the perfect dish for the remaining few weeks of summer, and it’s certain to impress.
Chocolate Pâté
Ingredients- 15 oz. (5 bars) Endangered Species Chocolate Extreme Dark Chocolate (panther)
- 6 oz. butter
- ½ cup milk
- 1 teaspoon salt
- 2 egg yolks
- IN a double boiler, melt chocolate, stirring in butter, milk and salt until smooth. Set aside to cool, but not harden. Once cooled, whisk in egg yolks.
- LINE an 8” loaf pan with plastic wrap. Spray wrap with nonstick cooking spray. Pour chocolate mixture into pan and cool overnight to harden.
- SLICE into ½” thick slices and garnish with fresh fruit, if desired.
