Many of us have memories of making pancakes on weekends while growing up. The best part was always getting to experiment with toppings, especially when your parents let you try some crazy stuff.
With Father’s Day this weekend – it’s a good time to flip the tables – so, how about whipping up some pancakes for your pops? For the winning topping, we have you covered.
One word: chocolate. Some people like chocolate chips in their pancakes, but we prefer ours with an ooey, gooey, drizzly chocolate melt all over a piping hot stack of fluffy goodness.
And Endangered Species Chocolate bars are up for that Sunday morning task. The best way to get your drizzle is to melt your bar(s) of choice using the double boiling method. It’s a simple process with spectacular results, though be careful not to burn the chocolate. The basic steps are to chop the chocolate into small pieces, place in a heat-proof bowl, and place the bowl over a saucepan of simmering water that reaches just below the bowl of chocolate. Stir, stir, stir and remove when melted.
Now, you’re ready for the bun part. Pile on your berries, bacon, powdered sugar, or whatever your favorite pancake accessories are, and then drizzle the chocolate all over. Make sure to do it slowly so everyone can oooh and aaah as you pour.
Then, eat, enjoy, do the dishes, hug your dad, and voila! A sweet morning had all by all.

Chocolate Pancakes
Ingredients
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
Directions
MIX the flour, baking powder, salt and sugar in a large bowl.
ADD in the milk, egg and melted butter and mix until smooth.
HEAT a lightly oiled frying pan or griddle over medium high heat.
POUR the batter onto the griddle, using a 1/4 cup to pour each pancake.
BROWN on both sides, never flatten with spatula, and serve hot.
