Peanut Butter Chocolate Cake

PEANUT BUTTER CHOCOLATE CAKE

If you, like so many others enjoy combining chocolate and peanut butter then this is the recipe for you. In honor of Peanut Butter Lovers Day our in-house master baker created this beautiful piece of indulgence and we wanted to share the recipe with you! Peanut Butter Chocolate Cake

Ingredients For Cake
  • 1 ¾ Cups Cake Flour
  • 2 cups organic cane sugar
  • ¾ cup premium organic cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • 2 eggs at room temperature
  • 1 cup organic whole milk
  • ½ cup organic vegetable oil
  • 2 tsp Fair Trade Vanilla Extract
  • 1 cup boiling water
Ingredients For Frosting
  • 1 ½ sticks organic salted butter
  • 2 cups smooth peanut butter
  • 2 cups powdered sugar
  • 1 tsp Fair Trade Vanilla Extract
  • 1 Tblsp Pink Himalayan Sea Salt
  • 2/3 cup Organic Heavy Cream
Ingredients For Decoration
  • 1, 3 oz bar of Endangered Species Chocolate 72% Smooth Dark Chocolate
  • 2 cups diced peanuts
Directions
  1. Butter and flour 2, 9 inch round pans
  2. Pre Heat oven to 350 F
  3. Blend dry cake ingredients in a standing mixer
  4. Combine oil, water, eggs, milk and vanilla in a bowl
  5. Slowly add the liquid mixture to the dry ingredients while mixing on low
  6. Mix until smooth, scraping down the bowl as needed
  7. Evenly pour into prepared pans
  8. Bake 28-34 minutes, checking with a toothpick for doneness
  9. Let cool completely before frosting
  10. Cream softened butter in a standing mixer
  11. Add peanut butter and vanilla, cream until smooth
  12. Add 1 cup of powdered sugar and mix until smooth
  13. Add 1/3 cup of heavy cream and mix until combined
  14. Add the remaining powdered sugar and sea salt, mix until smooth
  15. Add 1/3 cup of heavy cream and beat until smooth and ready to frost
  16. Place first cake layer on serving plate
  17. Using roughly ½-3/4 cup of frosting, spread a thin layer on top
  18. Place second cake layer on top of frosted layer
  19. Using the remainder of the frosting, top the cake and then spread down the sides, careful not to catch the cake and spread crumbs throughout the frosting
  20. Fill palm with diced peanuts and gently press onto the sides of the cake. Scoot the peanuts that fall around the cake, pressing up onto the sides as you work your way around the entire cake
  21. Shave (using a microblade, grater or knife) the Endangered Species Chocolate bar. Scatter on top of cake to desired coating
Chill the cake for roughly 1 hour prior to serving. Best when served chilled.
